Orcas Island’s beloved Italian Plums (Prune Alley, in the middle of town, used to be a country lane through an orchard of Italian prune trees) shine in this well-rounded preserve-accented with garden grown anise hyssop. Deep purple, rich, with just a hint of licorice. Try it lathered on toast, dolloped on dessert, or straight from the spoon. Perfect with Delice de Bourgogne or any triple crème. Or use layered into a jam tart with pate brise base and crumble topping.

Orcas pears are back! At the height of ripeness these locally discovered and cultivated pears cook beautifully into a rosy preserve, with notes of ginger from our fresh kitchen garden grown bay leaves. Highly versatile, this preserve is a gorgeous topping to pannacotta and cheesecake, and adds a sweet, lightly herbal note to cheese pairings. We adore it with Cypress Grove's Humboldt Fog or slathered between a wedge of brie, wrapped in puff pastry, and baked. But don’t be afraid to get crazy and deglaze a pork chop with it too.
A sweet little treasure of Orcas' agricultural history, these pears are the perfect example of a 'roadside' tree adapting itself perfectly to the island climate. Discovered in the 1970s, we're proud to be stewards of this delicious pears future (grow more people, grow more!).

A 2019 Good Food Awards Finalist! Deep within Orcas Island's bucolic Crow Valley, once planted as far as the eye could see in orchard fruit, lies JBS Farm's gorgeous patch of rhubarb. We've selected their deep red Valentine variety for this batch of preserves- lightly infused with garden grown English culinary lavender buds. The perfect balance of tart & sweet with just a touch of floral, this deep pink preserve is gorgeous with soft, creamy cow’s milk cheeses, a buttered baguette, or dolloped over panna cotta or ice cream. Is your mouth watering yet? It's also been known to play nice stirred into a bit of bubbly for a special kind of 'toast'.

Salted Apple Caramel:
Tart Gravenstein apples cut the sweetness of this deeply caramelized & slightly salted, preserve great with soft, creamy cheeses. A crowd pleaser, it can even hang with peanut butter for the kiddos (or for me!). But it’s equally at home on a crusty baguette adult style or spooned over poundcake. Did I mention butter? The real kind. It loves butter. Try serving alongside pork chops or tossing half the jar in the pan for the last few minutes of cooking.

Perfect to cozy up to year around our ruby red Quince Marmalade pays homage to ‘the first fruit’ and the origin of ‘marmalade’. This year's batch is particularly special - with a haul of fruit coming from a century old tree on Nordstrom Ln. We've also reworked the recipe to yield a softer jam with lots of beautiful red jelly. We're positively giddy about it. Use it as you would a contemporary marmalade, and enjoy the notes of honey and earth. Think coconut shrimp dipping sauce, sheep's milk cheese, a buttery baguette, or a rich mostarda (add a couple tablespoons of dry Coleman’s to a jar and serve with veal shank*).
